Potato starch – also known as potato flour – is extracted from potatoes. The cells of the root tubers of the potato plant contain starch granules (leucoplasts).

To extract the starch, the potatoes are crushed and the starch grains are released from the cells. The starch is then washed out and dried to powder.

Potato starch has been produced in the same basic way for centuries – even the ancient Incas knew how to make potato starch.

It has no potato flavour so works well in most recipes. As part of the starch component of a gluten-free flour blend, potato starch lends a light, fluffy texture to baked goods.

It is also a great thickener in gravies, sauces, and even in custards and puddings, which typically use corn starch.

Use potato flour to bake muffins and cookies or add it to sauces, gravies and soups to create a thicker consistency.

Best stored in an airtight container.
