Quinoa Banana Bread – Gluten Free

Ingredients

1 ¾ cups quinoa flour

½ tsp gluten free baking powder

1 ½ tsp bicarbonate soda

1 ½ tsp cinnamon

3 ripe bananas mashed

¼ cup maple syrup

1 egg

½ cup milk

2 tsp vanilla essence

¼ cup dried cranberries

 

Method

Preheat oven to 180C. Oil and line a 9x5inch loaf tin.

Mix quinoa flour, baking powder, baking soda, salt and cinnamon in a bowl.

In a separate bowl combine mashed bananas, coconut oil, maple syrup, egg, milk and vanilla essence, whisk until blended. Then stir the dry mix into the wet mix. Fold in the cranberries.

Bake for 45 mins.
